Weeknight Chicken Tacos Recipe

Mix up your weeknight routine with a dish that’s equally as delicious as it is simple to prepare. One of our favorite quick and easy staples are these Weeknight Chicken Tacos, and you’ll soon discover why! There’s nothing better than having a go-to taco recipe on hand for any occasion or weeknight meal and this recipe takes the cake for being oh-so-simple yet still full of delicious flavors.  

 


 
The best part of this Weeknight Chicken Taco recipe is that it only contains a few ingredients but can be easily customized and spiced up with your favorite taco toppings and sides. Also, this recipe is not only perfect for a festive weeknight meal but can be doubled {or tripled!} for your next all-Mexican-cuisine-themed gathering or even Cinco de Mayo. 
 
 
As you prepare to serve these chicken tacos, spice up the menu by adding a few fresh additions. One of our favorites is adding fresh pico de gallo, guacamole, cotija cheese, and fresh tortilla chips, of course! A Few Key Ingredients:  

  • Chicken – We prefer to use chicken thighs for a bit more flavor. 
  • Avocado Oil – Adds a subtle avocado flavor that pairs perfectly with this dish.  

 

Weeknight Chicken Tacos  

Serves 4  

 

Ingredients  

2 lbs. boneless skinless chicken thighs 

Siete Mild Taco Seasoning  

Avocado Oil 

 

In a bowl, combine the chicken, seasoning, and avocado oil. Toss to coat until evenly combined and let marinade for at least 15 minutes (or refrigerate and marinade for up to all day). 
 
Heat a cast iron skillet over high heat and when hot, sear the chicken until cooked through and golden brown on each side, about 4 minutes per side. Set aside and let rest for 10 minutes. 
 
After rested, dice the chicken into ½ inch sized cubes. 
 
Reheat the same skillet over high heat and when it is hot, add diced chicken (and any of its juices) back into the skillet and spread so that it is in an even layer. Let sear (do not stir) until the chicken gets crisp on the edges, about 2-3 minutes. Toss and let sear on the other side for 2 more minutes. Once the chicken is all golden brown and crispy on the edges, remove from the heat and serve immediately.  

Serve with lettuce cups or tortillas and preferred garnishes!
